Description
A brisket knife typically features a long blade, usually 10–14 inches, which allows for smooth, continuous slicing strokes without sawing through the meat. It often includes a Granton edge, the rows of dimples along the blade that help reduce friction and keep slices from sticking. Many brisket knives have a semi-flexible or flexible blade, making it easier to follow the natural contours of the meat and trim fat cleanly. The tip is usually rounded or blunt, since the knife is meant for slicing rather than piercing. High-quality brisket knives are made from high-carbon or stainless steel, providing sharpness, durability, and resistance to corrosion. Finally, they typically feature an ergonomic, non-slip handle designed for comfort and control during long slicing tasks.
